dc.description.abstract Food safety is the assurance that food will not cause harm to the consumer’s health when it is handled or eaten according to its intended use. Food safety problems are occurred around the world especially in the developing countries. The aim of the study was to assess the implementation of food safety system on large scale food manufacturing industries at Adama and Burayu town based on the standard. Food safety and food standards are critical global issues for health, trade and economic development. A mixed approach of qualitative and quantitative design was employed. The data was collected through structured questioner by key personnel interview, observation and document review. The study was conducted on 12 large scale food manufacturing industries, five industries from Adama and seven industries from Burayu were participated. Among 12 industries six industries were produced cereal based food products and six industries were produced bottled drinking water manufacturing industries. From a total of 12 large scale food manufacturing industries three (25%) industries were not implemented, seven (58.3%) industries partially implemented and two (16.7%) industries were fully implemented GMP requirements. Moreover, regarding the food safety management system only five (41.7%) industries were certified with food safety management system. Among the five certified food safety management system industries three industries (60%) were fully implemented HACCP principles and practices, one industry (20%) partially implemented and the remaining one industry (20%) was not implemented HACCP principles and practices properly. The study revealed that majority of large scale food industries were not fully implemented GMP requirements and HACCP principles. In addition, those factories implement GMP requirements and food safety management system had a limitation of follow up and monitoring in their system. Implementation of GMP requirements and HACCP principles in food industries, in placing continual monitoring of the effectiveness and consistency of the system and strength regulatory system will ensure and contribute food safety availed for the public health en_US
