A mathematical model was developed to describe the heat and moisture transport pro cesses occurring in the convective drying of injera. The numerical systems of heat and moisture partial differential equations (PDEs) were numerically solved by the finite el ement method (FEM) using COMSOL Multi-physics, 5.3. To validate the predicted results, a series of laboratory drying experiments were undertaken using a tunnel dryer atairtemperature(323.15and333.15K)andvelocity(0.25and0.5ms−1). Thepredicted against the experimental result showed a very good agreement with a coefficient of de termination (R2 > 0.95 for both temperature and moisture ratio ) and Root mean square error(RMSE<0.05foramoistureratioandRMSE<3.5Kfortemperature). Theimpor tant results from this research are the attainment of the temperature and moisture ratio distribution of the injera at different time and position (thickness and diameter),clearly showsequalityofdrying. Thetimerequiredtoreducedthemoistureofinjerafrom1(-) to 0.03 (-) at the temperature of 333 K, RH=11% and air velocity of 0.5ms−1 was 125 min. Both temperature and velocity were significantly more interested in moisture reduction when drying was conducted ( p <0.05). The interaction effect between them also indicates a significance difference (p <0.05) on moisture removal rate of injera.
