Abstract:
Mango juice has health and nutritional benefits-issue of uniformity. However, it may also
contain high level of metals or additives, causing a health problem and affect the quality of the
juice. Therefore, the main purpose of this study was to assess the physicochemical
characteristics and determine the metal content of mango juice in Bahir Dar City. Four brands
of mango juice samples (3D, Prigat, Rani, and Texas)were collected and analyzed for
physicochemical ( pH, TDS , EC and acidity value), essential metal (Mg, Ca, Cr, Ni, Mn, Zn, Fe
, and Cu)and non-essential metal (Cd and Pb). Metals were analyzed by ICP-OES, and acidity
value was estimated by titration. Statistical analysis(ANOVA) was also done for physicochemical
parameter and metal analysis of among four brands of juices .The observed results of quality
parameters of studied mango juices were found to have a pH range of 3.24 – 3.93, TDS of 571.6
– 2088 mg/L, Electrical conductivity of 867.3– 1374 µs/cm and acidity of 0.24 – 0.33 %, and
Metal content of calcium (0.40 – 69.50 mg/L ), magnesium (6.1 – 36.4 mg/L ), chromium (0.14
– 0.16 mg/L ), manganese (0.22 – 0.86 mg/L ), nickel (0.28 mg/L )in texas brand but not detect
in other brand, iron (0.92 – 9.00 mg /L ), copper (0.34 – 0.62 mg/L ), zinc (0.41 – 9.80 mg/L ),
cadmium (0.01 – 0.02 mg/L )in the three brand 3D, Prigat and Rani respectively, and lead
does not detected in all samples. This study indicates the values of physical parameters and
acidity were close to literature value whereas, the obtained results of most metal (Mn, Cr, Ni,
Cu, Fe and Zn were above literature value. The results of this study can be taken as an
indication for the need of control in packing juice.
